Our 5 ingredients are Beef Short Ribs, Jasmine Rice, Beef consume, Green beans, and Carrots. Put these five ingredients in a slow cooker. Dinner will be on the table when you come from work. The kids will have a meal ready when they come home from school.
Braised Beef Short Ribs with Jasmine Rice and Vegetables
Serves 4
Ingredients
For the short ribs:
- 3 lbs beef short ribs
- Salt and black pepper
- 2 tablespoons vegetable oil
- 1 onion, diced
- 4 cloves garlic, minced
- 2 cups beef consommé
- 1 cup red wine (or additional consommé)
- 2 tablespoons tomato paste
- 2 sprigs fresh thyme
- 1 bay leaf
For the rice and vegetables:
- 1½ cups jasmine rice
- 2¼ cups water
- 3 medium carrots, peeled and cut into 2-inch pieces
- ½ lb green beans, trimmed
- 2 tablespoons butter
- Salt to taste
Instructions
1. Prepare the short ribs:
- Season short ribs generously with salt and pepper on all sides
- Heat oil in a large Dutch oven over medium-high heat
- Sear ribs until deeply browned on all sides, about 3-4 minutes per side
- Remove and set aside
2. Build the braising liquid:
- In the same pot, sauté onion until softened, about 5 minutes
- Add garlic and cook 1 minute
- Stir in tomato paste and cook 2 minutes
- Add wine and scrape up browned bits from the bottom
- Pour in beef consommé, add thyme and bay leaf
3. Braise the ribs:
- Return ribs to pot, nestling them in the liquid
- Bring to a simmer, cover, and transfer to a 325°F oven
- Braise for 2½-3 hours until meat is fall-off-the-bone tender
4. Cook the rice:
- About 30 minutes before serving, rinse jasmine rice until water runs clear
- Combine rice and water in a pot, bring to a boil
- Reduce heat to low, cover, and simmer 15 minutes
- Remove from heat and let stand covered for 5 minutes
5. Prepare the vegetables:
- Steam carrots for 8-10 minutes until tender
- Steam green beans for 5-6 minutes until crisp-tender
- Toss vegetables with butter and season with salt
6. Serve:
- Plate jasmine rice, top with short ribs
- Spoon braising liquid over the meat
- Arrange carrots and green beans alongside
- Garnish with fresh herbs if desired
Tips
- The braising liquid can be reduced on the stovetop for a thicker sauce
- This dish tastes even better the next day after flavors have melded
- Save any extra braising liquid for dipping crusty bread
